Mint Chip Avocado Ice Cream

This avocado ice cream is so creamy, made with only six ingredients and doesn’t require an ice cream maker! It’s also vegan and gluten-free!

avocados almond milk maple syrup, honey, or other liquid sweetener coconut oil peppermint extract chocolate chips


Blend avocados, almond milk, coconut oil and maple syrup until creamy. Stir in chocolate chips.

1. Blend

Pour into a freezer-safe container. I used a loaf pan lined with parchment. Freeze for 4-5 hours.

2. Freeze

Pull ice cream from freezer and soften for 5-10 minutes. Scoop ice cream and enjoy!
