Keyword: Chocolate Strawberry Banana Yogurt Clusters
Servings: 12
- 2 cups strawberries chopped
- 1 large banana chopped
- ½ cup plain full fat Greek yogurt
- 1 Tablespoon honey
- 1 cup dark chocolate chips
- 1 Tablespoon coconut oil
- chopped roasted + salted peanuts for sprinkling
Add fruit, yogurt and honey to a large bowl and gently stir until combined.
Scoop mixture onto a parchment lined baking sheet and place in the freezer for about 1 hour.
Melt your chocolate chips and coconut oil in 30-second increments in the microwave or using a double boiler.
Remove the yogurt clusters from the freezer and coat each one in chocolate. PRO TIP: I don’t recommend dipping the clusters into the chocolate, the cold cluster will cause the chocolate to harden and make it very difficult to work with. I learned this the hard way!
Quickly sprinkle with chopped peanuts before the chocolate hardens.
Place clusters in the freezer until chocolate has fully hardened and enjoy!
