This baked caprese chicken comes together in one pan with simple ingredients. It's juicy, flavorful and the perfect 30-minute meal to make on busy weeknights!
Pat chicken breasts dry and season with ½ tsp salt and ½ tsp pepper.
Add olive oil to a 9x13 baking dish with tomatoes, garlic powder (or fresh garlic), oregano and remaining salt and pepper. Toss to coat. Add chicken breasts to baking dish nestled into tomatoes.
Bake for 20 minutes then remove from the oven and top chicken with mozzarella slices and fresh tomato slices (if using).
Bake for an additional 5-10 min until the internal temperature of chicken is 165°F and mozzarella has melted. Broil for the last 2-3 minutes, if desired.
Remove from oven and drizzle with balsamic glaze and sprinkle on fresh basil leaves. Serve with sautéed spinach, rice, pasta or sourdough.
