- 14 ounces firm tofu
- 1 10 ounce bag vegan chocolate chips I used Enjoy Life
- ½ cup unsweetened vanilla almond milk
- ½ cup maple syrup
- Coconut whip cream for topping (optional)
Baked pie crust as directed on the package. Remove and let cool while you make the filling.
Melt chocolate in a microwave-safe container for about 2-3 minutes, stirring every 30 seconds until completely melted. Set aside to cool for 1-2 minutes.
Add melted chocolate, tofu, almond milk and maple syrup to food processor or high powered blender and blend until smooth.
Pour filling into pie crust and smooth out top with a spatula. Place in fridge to firm up for 12 hours, or overnight.
Once ready to serve, take a sharp knife and run it under the faucet to get it wet. Cut pie and serve with a dollop of coconut whip cream. Enjoy!
