Sweet Potato Breakfast Cookies

Cookies for breakfast?! Sign me up! These sweet potato breakfast cookies are super easy to make, delicious and great to have on hand for an on-the-go breakfast. Vegan and gluten-free!

Ingredients

Blend half of the oats in a blender or food processor until fine.

1. Make Oat Flour

Mix together dry ingredients in a bowl.

2. Mix Dry Ingredients

Mix together wet ingredients in another bowl.

3. Mix Wet Ingredients

Combine the wet and dry ingredients. Stir in pecans and chocolate chips.

4. Combine

Bake cookies for 25-30 minutes at 350°F until edges are golden.

5. Bake

Store cookies and enjoy! Easy to freeze and heat up for a quick breakfast.
