Healthy Pumpkin Bars

These healthy pumpkin bars are made with whole wheat flour, Greek yogurt, applesauce and studded with chocolate chips. They have less oil than traditional pumpkin bars and can easily be made vegan.

Ingredients

Whisk together whole wheat flour, pumpkin pie spice, baking soda and salt.

1. Mix Dry Ingredients

In a large bowl mix coconut/brown sugar, applesauce, Greek yogurt, coconut oil, egg whites/flax eggs, and vanilla. Stir in pumpkin.

2. Mix Wet Ingredients

Slowly pour flour mix into the wet ingredients and mix well until everything is combined. Stir in chocolate chips.

3. Stir

Pour dough evenly into the greased pan and top with additional chocolate chips. Bake bars for 30 minutes.

4. Bake

Cool completely, cut and enjoy!
