Healthy Breakfast Casserole

This make ahead healthy breakfast casserole is flavorful, cheesy, packed with protein and much lighter than traditional breakfast casseroles. Perfect for brunch and serving a crowd!

Ingredients

In a bowl, mix together eggs, almond milk, broccoli, cottage cheese, feta, onion, parsley, garlic, salt and pepper.

1. Mix 

Pour the egg mixture over gluten-free bread cubes in a dish. Cover, and refrigerate at least 1-2 hours or overnight.

2. Chill Casserole

Let casserole come to room temp for 30 minutes, then bake and enjoy!
