Ellen's  Sourdough Bread

A beginner's guide to making artisan sourdough bread at home! This simple, no-knead recipe is easy to make with your sourdough starter. Just let the dough rise overnight and bake in the morning!

Ingredients

Mix together water, sourdough starter, flour, rye flour and white whole wheat flour. Cover and set for 15 minutes.

1. Mix

“Stretch and fold” the dough, cover and wait another 15 minutes. Repeat until you have done four total “stretch and folds.” Dough should then be smooth.

2. Stretch + Fold

Cover tightly and leave the dough at room temperature until it has doubled in size.

3. Let Dough Rise

Divide dough in half. Take each round and pull edges to center all the way around. Cover with a tea towel for 10 minutes. Cover and chill overnight.

4. Roll Loaves + Chill

Put a Dutch oven in the oven and heat at 500°F degrees. Take a loaf out of the fridge, flip over onto parchment, score and put into the heated dutch oven.

5. Day 2 - Score Bread

Reduce heat to 450°F degrees and bake 20 minutes covered, then uncover and bake another 20 minutes.
