Cauliflower Gratin

This cauliflower gratin features cauliflower florets baked to perfection in a creamy cheese sauce and topped with breadcrumbs. It's vegetarian, low-carb and the perfect addition to your holiday menu.

Ingredients

Chop cauliflower into florets and place in a large pot of water. Heat until water is boiling. Simmer until cauliflower is tender, but still firm. Drain.

1. Cook Cauliflower

Heat butter in a large saucepan. Add chopped onion and garlic and sauté until tender and fragrant.

2. Sauté 

Stir in flour, salt, pepper and nutmeg. Add almond milk and bring to a boil to thicken. Remove from heat and stir in gruyere and parmesan.

3. Make Cheese Sauce

Add cauliflower to prepared baking dish, then pour sauce evenly over cauliflower.

4. Add to Casserole Dish

Top casserole with more cheese and panko/almond meal. Bake.
