This three ingredient, no-cook zucchini noodle pesto pasta is the perfect healthy pasta dish for summer.
Happy Saturday! It’s been raining here in Richmond so it’s kind of dreary and blah, but that didn’t stop me from having a fun morning at my local Pure Barre studio — taking class and then teaching a little spiralizer demo afterward.
As I’m sure most of you know, I’m a HUGE spiralizer(affiliate link) fan. I not only love using it, but I also enjoy telling everyone I know about it. I’ve pretty much convinced all my friends, family and clients to buy one. I can’t help it — it’s such a cool kitchen gadget and it makes preparing healthy, veggie-packed meals so easy. What’s not to love?
At the demo this morning I gushed about how I use my spiralizer(affiliate link) on the daily, showed everyone how to use it, explained the different blades and provided samples of a quick zucchini noodle pasta dish. The recipe for the pasta is so darn simple I honestly wasn’t planning to share it, but sometimes simple is where it’s at sooo I’m doing it. Hopefully you don’t mind. 😉
The recipe requires only three ingredients – a zucchini, a tomato and pesto.
You can certainly make your own pesto but Mama’s Pesto (which is fresh prepared pesto from Whole Foods) worked perfectly and saved me a bit of time.
Once you have your zucchini spiralized all you have to do is toss the noodles in a bowl with the pesto and tomatoes and you’ve got yourself a delightful little pasta dish. This dish is great for summer all of the produce included is available throughout the summer months and there’s no cooking involved!!
Simply pair this pasta with your favorite protein for a healthy dinner that comes together in about 15 minutes! Amazing, right?
