Apple Samoas with Date Caramel

These apple samoas are super simple and fun to make. Just top apple rings with date caramel, toasted coconut and chocolate. A great kid-friendly recipe!

Ingredients

  • 1 large apple I love Honeycrisp
  • 2 Tablespoons date caramel
  • 2 Tablespoons unsweetened coconut flakes
  • 2 Tablespoons chocolate chips dairy-free, if needed
  • 1/2 teaspoon coconut oil

Instructions

  • Prep date caramel if you haven't already.
  • Toast coconut by putting it in a small pan or skillet over medium-low heat for 3-6 minutes. Be sure to stir continuously to prevent the coconut from burning.
  • Cut apple into 1/4" slices. You should be able to get about 4 slices. Feel free to snack on the first slice and the last slice since those won't have a uniform shape.
  • Use a melon baller to remove the core from the apples and make a little hole in the center of each slice. You can also use a spoon or an apple corer for this step, just be sure it's this type and not one that chops the apple into sections. Also! You can do this step first if you're using an apple corer.
  • Use a knife to spread about 1/2 Tablespoon of date caramel on each apple ring. Sprinkle toasted coconut over each.
  • In a small microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until fully melted. Drizzle melted chocolate on apple slices and serve immediately or place in the fridge or freezer for a few minutes, just to let the chocolate harden.
