A simple tomato cucumber salad with fresh herbs and a light dressing. It's the perfect summer side salad to pair with your favorite protein.

  • 2 cups diced cherry tomatoes
  • 2 cups diced English cucumber
  • ½ cup diced red bell pepper optional
  • ¼ cup red onion diced
  • ¼ cup finely chopped mint
  • ¼ cup finely chopped parsley
  • 2 Tablespoons fresh lemon juice
  • 1-2 Tablespoons extra virgin olive oil
  • Sea salt to taste


  • Combine all ingredients together in a large bowl. Season with salt to taste. Refrigerate until ready to serve.
