Roasted Beets

Learn the easiest way to cook beets with this simple recipe! All you need is one ingredient and about five minutes of prep time. These roasted beets are the perfect side that you can pair with just about any main dish.

Ingredients

  • 1 large bunch of beets

Instructions

  • Cut the beet greens off of the beets, leaving ½ inch at the top. Save the beet greens for another recipe.
  • Scrub the beets clean, poke 2-3 times with a fork and wrap tightly in aluminum foil. Roast in a 400°F oven until tender, about 75-90 minutes, depending on the size of your beets.

  • Unwrap the beets (they’ll be piping hot so be careful!) and run cool water over them.

  • The skin should easily peel off while you do this. Once peeled you’re ready to use them however you’d like.
