Vegan Power Bowl

This vegan power bowl is loaded with roasted sweet potatoes, kale, spicy chickpeas and topped with a creamy white bean and apple cider vinegar dressing. Vegan + gluten-free.

Ingredients

Roast sweet potatoes with cumin, olive oil, salt and pepper. Towards the end of roasting, add the kale and roast with olive oil, salt and pepper.

1. Roast Veggies

Season chickpeas with brown sugar, chili powder, salt and pepper. Brown chickpeas in a skillet with olive oil.

2. Cook Chickpeas

Add cannellini beans, warm water, apple cider vinegar, olive oil, salt, pepper and cumin if desired to a blender. Blend until smooth and creamy.

3. Make Dressing

Divide roasted vegetables between two bowls, top with chickpeas and drizzle with dressing.

4. Serve
