Vegan Potato Soup
This easy vegan potato soup is creamy, hearty and loaded with flavor. It's a comfort-food classic that will quickly become a family favorite.
Sauté garlic and onions in oil. Add carrots and celery.
1. Sauté Veggies
Add flour, salt, pepper and stir.
2. Add Flour
Add milk, vegetable broth, potatoes, bay leaf, thyme, marjoram and nutmeg. Boil soup, cover and simmer until potatoes are cooked.
3. Cook Soup
Use an immersion blender to blend some of the soup until somewhat smooth.
Top with vegan shredded cheese, sour cream and green onions. Tempeh or coconut bacon bits are also delicious.
