Superfood Salmon Salad

This salmon salad is loaded with roasted sweet potato croutons, avocado, pickled onions and dressed in a light lemon vinaigrette! It’s an easy go-to meal you’ll love having as part of your weekly rotation.


Mix apple cider vinegar, water, sugar and salt.

1. Make Pickling Mix

Pickle red onions in mixture for 1 hour +.

2. Pickle Onions

Roast sweet potatoes with oil and salt.

3. Make Croutons

Whisk together apple cider vinegar, lemon juice, water, dijon, honey or maple, oregano, garlic, salt, pepper and olive oil.

4. Make Lemon Dressing

Season with salt + pepper. Sear in avocado oil.

5. Cook Salmon

Toss greens, pickled onions, feta + pepitas.

6. Assemble Salad

Top with sweet potato croutons, salmon, avocado and dressing

7. Top Salad

Serve salad and enjoy!
