LET'S MAKE IT

Add dates and toasted coconut to a food processor. Pulse until mixture is combined and starts to form a ball of dough.
Roll 1 Tbsp size pieces of dough into a ball and then shape into a round cookie. Use a straw or chopstick to make a hole. Place cookies in freezer to harden up.
Melt dark chocolate and coconut oil in 20-30 second increments until the chocolate is melted enough to drizzle.
Dip + Drizzle
Take cookies from freezer and dip the bottom half in chocolate. Drizzle chocolate on top for that iconic Samoas look!
Chill + Enjoy!
Put cookies in the freezer for 10-15 minutes to let the chocolate harden. Store in a sealed container in the fridge for up to one week.
