Pineapple Fried Quinoa

A healthy take on fried rice, this pineapple fried quinoa is delicious and super fun served in a pineapple boat. It’s also vegan and gluten-free.

Ingredients

quinoa olive oil yellow onion red bell pepper garlic ginger whole pineapple edamame tamari or soy sauce sambal oelek lime green onion cashews

Make quinoa and fluff with a fork.

1. Make Quinoa

Cut pineapple in half. Scoop out pineapple flesh  so you’re left with two pineapple boats. Chop the fruit and set aside.

2. Prep Pineapple

Sauté onion, pepper, garlic and ginger in oil.

3. Sauté Veggies

Add pineapple, edamame, tamari, sambal oelek, edamame, lime juice and cooked quinoa to the pan. Stir and cook.

4. Combine

Transfer fried quinoa to pineapple boats and top with cashews and green onion and serve.
