Mason Jar Nicoise Salad

This Nicoise mason jar salad combines fresh veggies, canned tuna, potatoes and hard boiled egg with a lemon vinaigrette. It’s flavorful, loaded with protein and is perfect for meal prep!

Ingredients

Boil potatoes and cut into wedges.

1. Cook Potatoes

Boil green beans until cooked. Drain water and cool.

2. Cook Green Beans

Whisk together apple cider vinegar, lemon juice, water, dijon, honey/maple syrup, oregano, garlic, salt, pepper and olive oil.

3. Make Lemon  Vinaigrette Dressing

Layer ingredients into mason jars: dressing, kalamata olives, green beans, potatoes, tomatoes, canned tuna, arugula, hard-boiled egg and parsley.
