Almond Flour Lemon Cookies

These gluten-free lemon cookies are made with almond flour and bursting with bright, citrus flavor in every bite. They're soft and chewy and topped with the most delicious lemon glaze for the ultimate treat.


Cream butter and sugar together. Add in vanilla, lemon extract, egg, lemon zest, and lemon juice and whisk again until combined.

1. Mix Wet Ingredients

Add almond flour, baking soda and salt to wet ingredients and stir using a spoon until just combined. Chill dough at least 1 hour.

2. Add Dry + Chill

Scoop the dough, roll into a ball and place onto baking sheet. Bake at 350°F for 12-14 minutes until edges are slightly browned.

3. Bake

Whisk together lemon juice and powdered sugar.

4. Make Lemon Glaze

Top cooled cookies with glaze and lemon zest.
