Healthy Sweet Potato Casserole

This healthy sweet potato casserole is lighter in sugar, dairy-free and made with a crunchy oatmeal pecan topping. Vegan + gluten-free.


sweet potatoes coconut milk maple syrup coconut oil flaxseed vanilla cinnamon sea salt nutmeg brown or coconut sugar pecans old fashioned oats oat or almond flour

Add sweet potatoes to a pot of water. Boil and then simmer 15-20 minutes until tender.

1. Cook Potatoes

Mix together pecans, oats, oat/almond flour, and brown/coconut sugar. Cut in coconut oil.

2. Make Topping

Stir together coconut milk, maple syrup, oil, flaxseed, vanilla, cinnamon, nutmeg, and salt.

3. Make Filling

Sprinkle filling with the topping. Bake uncovered for 40-45 minutes, until golden brown.

4. Bake

Serve and enjoy! This side dish is perfect for the holidays or special occasions.
