Healthy Green  Bean Casserole

Healthy green bean casserole made with a creamy mushroom cashew sauce and homemade crispy baked onions. Vegan + gluten-free.


onions oat flour panko (gf if needed) salt cooking spray soaked cashews almond milk green beans vegan butter mushrooms pepper garlic nutmeg vegetable broth tamari or soy sauce

Soak cashews in water for at least 30 minutes.

1. Soak Cashews

Coat onions in breading mixture and bake.

2. Make Onions

Blend cashews and almond milk until creamy.

3. Make Sauce

Blanch green beans.

4. Blanch Green Beans

Sauté mushrooms with spices, oat flour + broth.

5. Make Mushroom Sauce

Toss beans with sauce, add onions and bake.

6. Bake Casserole
