Healthy Chicken Enchiladas

These healthy chicken enchiladas are packed with flavor and nutritious ingredients! The homemade enchilada sauce is the star of this recipe.

Enchilada Sauce Ingredients

olive oil garlic canned chipotle peppers in adobo sauce adobo sauce from can tomato sauce dried oregano chili powder ground cumin low sodium vegetable or chicken broth sea salt pepper

Chicken + Veggies Ingredients

olive oil shredded chicken, about 2 breasts frozen corn, thawed cooked black beans yellow onion garlic cilantro chili powder cumin homemade enchilada sauce

Enchiladas Ingredients

7-inch whole wheat flour tortillas shredded Mexican cheese green onions cilantro jalapeños (optional) Greek yogurt or sour cream (optional) avocado (optional)

Sauté onions and garlic in olive oil.

1. Start Enchilada Sauce

Add enchilada sauce ingredients and simmer.

2. Simmer Sauce

Sauté onions + garlic. Add chicken, veggies, sauce and spices.

3. Make Filling

Fill tortillas with chicken mixture and cheese.

4. Roll Enchiladas

Top enchiladas with sauce + cheese. Bake.

5. Cover + Bake

Serve enchiladas with optional toppings. Enjoy!
