Healthy Carrot Raisin Muffins

These healthy carrot raisin muffins are made with almond and coconut flour and studded with fresh carrots and raisins. Perfect for a quick breakfast or afternoon snack. Gluten-free + dairy-free.

Ingredients

Mix together flours, cinnamon + baking soda.

1. Mix Dry Ingredients

Mix together eggs, milk, oil, honey and sugar.

2. Mix Wet Ingredients

Stir carrots and flour into the wet ingredients.

3. Mix Batter Together

Gently fold raisins into the muffin batter.

4. Add Raisins

Scoop batter into a lined muffin tin and bake.

5. Bake

Drizzle muffins with coconut butter (optional) and enjoy!
