Grilled Shrimp Salad

Grilled shrimp salad with quinoa, broccoli and roasted asparagus! Prepare everything ahead of time and throw it into a bowl for a quick and easy lunch or dinner.

Ingredients

Blanch broccoli in boiling water for 1-2 minutes. Move to an ice bath to stop cooking.

Roast asparagus. Prep the veggies and ingredients ahead of time for a quick and easy meal.

2. Roast Asparagus

Top spring mix with grilled shrimp, broccoli, asparagus, cabbage, cucumbers, tomato, avocado, and quinoa. Top with balsamic vinegar, olive oil and pepper.
