Maple Pecan Baked Oatmeal

This maple pecan baked oatmeal is studded with chopped pecans and lightly sweetened with pure maple syrup. Fancy enough to serve for brunch, but perfect for meal prep as well.

Ingredients

old fashioned rolled oats chopped pecans maple syrup baking powder cinnamon sea salt unsweetened almond milk egg or flaxseed (for vegan) melted coconut oil vanilla extract bananas cooking spray

Mix together oats, salt, baking powder, cinnamon and pecans.

1. Mix Dry Ingredients

Add almond milk, maple syrup, melted coconut oil and vanilla.

2. Add Wet Ingredients

Stir in an egg (or 1 Tbs ground flaxseed for vegan) and banana slices.

3. Stir

Pour oatmeal mixture into a prepared dish, top with pecans and bake.

4. Bake

Enjoy with maple syrup if desired. This oatmeal is perfect for meal prep too!
