Vegetable Soup

 DAIRY-FREE | VEGETARIAN

In a large stockpot, sauté onions, carrots, celery and garlic. Season with salt and pepper.

 STEP ONE

Stir in curry powder, Italian seasoning and bay leaves.

 STEP TWO

Add tomatoes, potatoes, zucchini, green beans, corn and broth. Bring to a boil.

 STEP THREE

Cover and simmer for  25-30 minutes. Then add a splash of lemon juice. 

 STEP FOUR

Serve with fresh parsley, a side salad, crusty bread or crackers.
