Cauliflower Tacos with Avocado Crema

These vegetarian cauliflower tacos are packed with Mexican flavor and topped with a creamy avocado crema. They’re delicious, easy to make and perfect for taco night.


Toss cauliflower with oil, chili powder, cumin, garlic powder, onion powder, red pepper, oregano, paprika, salt and pepper.

1. Season Cauliflower

Roast cauliflower on a baking sheet.

2. Roast Cauliflower

Combine avocado, Greek yogurt, cilantro, lime juice, salt and water in a blender or food processor and blend until smooth and combined.

3. Make Avocado Crema

Make tacos by adding cauliflower into each tortilla. Top with avocado crema, shredded red cabbage, pico de dallo, cilantro and additional toppings as desired.
