Cauliflower Tabbouleh

This fresh and flavorful cauliflower tabbouleh salad uses riced cauliflower instead of bulgur wheat to keep it low-carb and  gluten-free.

Ingredients

cauliflower parsley mint green onion cherry tomatoes cucumber kalamata olives garlic lemon juice apple cider vinegar olive oil turmeric sea salt + pepper

Chop cauliflower into small pieces with a food processor.

1. Chop Cauliflower

Toss cauliflower with all the veggies, herbs, dressing and seasoning.

2. Toss

Serve chilled or at room temperature. Great for parties, cookouts and meal prep!
