These low-carb cauliflower nachos are cheesy, delicious and loaded with extra veggies like tomatoes, jalapeño peppers, onions and avocado.

Cheesy Cauliflower Nachos
Slice cauliflower into 1/2-inch slices.
Spice + Roast
Toss cauliflower with oil, garlic powder, onion powder, cumin, paprika, chili powder and sea salt. Bake cauliflower for 20 minutes at 425F, until browned.
Add Toppings + Bake
Push cauliflower together in the center of the pan. Top with refried beans, cheese and jalapeño. Bake another 6-7 minutes until cheese is melted.
Top + Enjoy!
Top cauliflower with tomato, red onion and cilantro. Add avocado (if using) and serve!
