Carrot Cake  Baked Oatmeal

This carrot cake baked oatmeal is studded with carrots, pineapple and walnuts and topped with a maple cream cheese frosting. Fancy enough to serve for Easter brunch but healthy enough to make for weekly meal prep! Vegan-friendly.

Ingredients

Mix together all ingredients in a bowl, but the glaze ingredients.

1. Mix All Ingredients

Pour into a prepared baking dish and bake.

2. Bake

Whisk together cream cheese, almond milk, maple syrup and vanilla.

3. Make Glaze

Drizzle cream cheese glaze over the oatmeal.

4. Top With Glaze

Enjoy! Perfect for brunch or meal prep.
