Butternut Squash and Turkey Chili

Not your average chili, this butternut squash and turkey chili features red lentils and is simmered in a creamy coconut milk and tomato broth. It can be made in your pressure cooker or on the stove top!

Ingredients

Sauté onion and garlic in a little olive oil for 3-5 minutes.

1. Sauté Onion

Brown ground turkey. Add turmeric, cumin, chili powder, cayenne, cinnamon, salt and pepper

2. Brown Turkey

Add squash, lentils, tomatoes, coconut milk and broth. Cook chili.

3. Simmer

Add kale or spinach and let greens wilt.

4. Add Greens

Top with cilantro and green onions. You can also serve the chili over brown rice if you’d like.
