Baked Eggplant Parmesan

Make a healthy baked eggplant parmesan with crispy almond flour-coated eggplant slices that are baked — no frying or bread crumbs needed!

Ingredients

eggplants eggs almond flour or breadcrumbs parmesan Italian seasoning sea salt black pepper cooking spray marinara sauce mozzarella fresh basil

Slice eggplants into 1/2 inch rounds.

1. Slice Eggplants

Stir together almond flour, spices and parm.

2. Make "Breading"

Whisk together eggs, water, salt and pepper.

3. Make Egg Dip

Dip eggplant in egg then breading. Bake.

4. Bread + Bake

Layer sauce, eggplant, and cheeses. Repeat.

5. Layer Casserole Dish

Top with cheese and fresh basil. Bake 15-20 min.

6. Bake

Enjoy with fresh basil and dig in!
