I had a crazy Friday night, let me tell you! It all started with a little supercharging. I had tried the lovely Supercharge Me cookies before when the lovely Gina sent me a few, but those are long gone. I wanted to make a special treat for a party I’m going to tonight and once I saw that Dreena, author of Eat, Drink, Be Vegan, had posted the recipe for these superpowered cookies I made my way to the grocery store for the ingredients that I was missing. I improvised a bit and used whole wheat flour and ground my own flax seed instead of buying flax meal (essentially the same thing).
Does it look like homemade granola or what? Isaac and I both tasted the dough and it was superb. I could seriously eat it this stuff like granola, only that probably wouldn’t be the best idea considering I would be eating cookie dough by the handful, not granola. But I thought ahead 12 hours and saved the last of the dough for oatmeal topping for this morning.
- 1/4 cup oat bran
- 1/4 cup quick oats
- 1/2 banana
- 1 cup H20
- 1/4 cup Unsweetened Almond Milk
- 1/2 scoop vanilla protein powder
- Supercharge topping (probably a tiny bit less than 1 cookie worth of dough)
Heavenly, for serious! It was so good- I could really taste the peanut butter and flax, the cranberries were a nice chewy addition, and of course the mini chocolate chips were melty and delicious. I’m now wishing I had saved more dough. :/
And for the final product
My batch made a few more cookies that what the recipes suggests (11-12) but it’s probably just due to the fact that I made mine a little smaller. Oh well, they are really, really tasty. Both Isaac and I enjoyed one last night, just to make sure they are okay for me to take to the party today 🙂
After the cookies were done I totally crashed as Isaac headed out to a neighbor’s house to hangout. See how crazy my Friday night was??
I actually have 2 parties to attend today- I’m a regular party animal. But right now I’m off to the gym, then the bridal shower at 12, and then a housewarming party this evening. It should be a blast.
