Here’s how to make individual portions of baked oatmeal with four fun flavor variations: strawberry chocolate chip, blueberry, apple cinnamon and banana nut.

As you know, I am a full blown oatmeal lover. I’ve shared countless overnight oats recipes, traditional oatmeal recipes, baked oatmeal recipes and now I wanted to share single serving baked oatmeal!

I love making a big batch of baked oatmeal as meal prep for the week, but sometimes I just want one serving of the flavor I’m craving! These are super simple to make and take no time at all… I can see myself treating myself to these single serve baked oatmeals quite often!

You Will Love Single Served Baked Oatmeal

Whether or not you’ve tried one of my classic baked oatmeal recipes, I know you’re going to love this single serve version! Here’s why:

What if I Need More Than 1 Serving?

Flavor Variations

Strawberry Chocolate Chip Baked Oatmeal

Add in 2 tablespoons of mashed bananas, 2 tablespoons of chopped strawberries and 1 tablespoon of chocolate chips before baking. Top with chopped strawberries, banana slices and/or maple syrup!

Apple Cinnamon Baked Oatmeal

Add in 2 tablespoons of applesauce and 2 tablespoons of chopped apples before baking. Top with extra apple chunks, a drizzle of maple syrup and/or a drizzle of nut butter!

Blueberry Baked Oatmeal

Add in 2 tablespoons of vanilla protein powder, 1 tablespoon of almond butter and 2 tablespoons of blueberries. Top with extra blueberries!

Banana Baked Oatmeal

Add in 2 tablespoons of mashed bananas, 2 tablespoons of chopped walnuts and 2 tablespoons of vanilla protein powder before baking. Top with additional banana slices and enjoy!

Can I Add Protein Powder?

Yes! The blueberry and banana variations already include protein powder but you can add 2 tablespoons to any of these recipes without adding extra liquid. I love adding protein to make this a more filling and satisfying breakfast.

How to Store Baked Oatmeal

Baked oatmeal stores super well! After allowing to cool, store in an airtight container in the refrigerator for up to 5 days. You can also freeze for longer storage!

Single Serving Baked Oatmeal – 4 Ways

Ingredients  

Strawberry Chocolate Chip Baked Oatmeal

  • ½ cup old fashioned rolled oats
  • ½ cup unsweetened almond milk
  • ½ teaspoon chia seeds, (optional)
  • ½ teaspoon baking powder
  • teaspoon ground cinnamon
  • 1 pinch sea salt
  • 1 Tablespoon maple syrup
  • 2 Tablespoon mashed banana
  • 2 Tablespoon chopped strawberries
  • 1 Tablespoon chocolate chips, plus more for topping
  • chopped strawberries, banana slices and/or maple syrup, optional toppings

Instructions 

Strawberry Chocolate Chip Baked Oatmeal

  • Preheat: Preheat oven to 350F.
  • Mix ingredients: Combine all ingredients (except chopped strawberries and chocolate chips) in a mixing bowl.
  • Add mix-ins: Add chopped strawberries and 1 Tablespoon of chocolate chips. 
  • Pour: Pour into a greased ramekin. (I used an 8 oz mini Le Creuset) Top with additional chocolate chips. 
  • Bake: Bake at 350°F for 30-35 minutes or until an inserted toothpick comes out clean. 
  • Enjoy: Let cool, add toppings of choice and dive in. 

Apple Cinnamon Baked Oatmeal

  • Preheat: Preheat oven to 350°F.
  • Mix ingredients: Combine all ingredients in a mixing bowl.
  • Pour: Pour into a greased ramekin. Top with additional chopped apples.
  • Bake: Bake at 350°F for 30-35 minutes or until an inserted toothpick comes out clean. 
  • Enjoy: Let cool, add toppings of choice and dive in.

Blueberry Baked Oatmeal

  • Preheat: Preheat oven to 350°F.
  • Mix ingredients: Combine all ingredients in a mixing bowl.
  • Pour: Pour into a greased ramekin.
  • Bake: Bake at 350°F for 25 minutes or until an inserted toothpick comes out clean. 
  • Enjoy: Let cool, top with a drizzle of almond butter and extra blueberries and dive in!

Banana Walnut Baked Oatmeal

  • Preheat: Preheat oven to 350°F.
  • Mix ingredients: Combine all ingredients (except 1 T walnuts and banana slices) in a mixing bowl.
  • Add walnuts: Add chopped walnuts
  • Pour: Pour into a greased ramekin. Top with additional walnuts.
  • Bake: Bake at 350°F for 25-30 minutes or until an inserted toothpick comes out clean. 
  • Enjoy: Let cool, top with more almond butter and banana slices and dive in!

    Which one is only 254 cal without toppings? The blueberry is about 550 cal without additional toppings 🤔

    1. Hey Andrea – The blueberry one is 315, strawberry is 221, banana is 382 and apple is 254 calories.

        I wonder what the difference is in our ingredients. I’m getting around 530 for the blueberry as well. The oats (BRM) and almond butter (Kirkland) are the biggest counts on my end.

    Delicious, quick, and easy! I tried baked oatmeal a few months ago and disliked it so much I thought I’d never make it again. Since this was single serving I figured I’d give it another chance and I’m so glad I did! I will definitely be trying all the other flavors!!

    Excellent recipe! I used an entire apple in a 2 serving dish and tossed in a few pecans and blueberries. I like that it doesn’t call for an egg. My kind of recipe.

    I just made the strawberry chocolate chip one. I reccommend you using a thinner container when you bake it, because i used a traditional glass container out of my cupboard. It is too deep i think, so i had to bake it for MUCH longer. I LOVED this recipe- will definitely make this one of my comfort meals. Super easy to throw together, you just need enough time to bake it.

  7. When the calorie count says “without toppings”, does this mean the bare oatmeal recipe without the fruit/nuts/chocolate added? Or do they all have similar nutrition facts?
