This delicious peanut butter banana baked oatmeal features is easy to prep and makes a great family-friendly breakfast.
One of my favorite oatmeal recipes to date is this stove top recipe for peanut butter oatmeal. Peanut butter and banana is one of the best oatmeal combos in my personal opinion and I’m honestly surprised it took me so long to come up with a baked oatmeal recipe that has both!

Peanut Butter Banana Baked Oatmeal
Ingredients
- 2 cups old fashioned rolled oats
- ¼ cup pure maple syrup
- 1 teaspoon baking powder
- ½ teaspoon ground cinnamon
- ½ teaspoon sea salt
- 2 cups unsweetened almond milk
- 1 Tablespoon ground flaxseed
- ¼ cup natural peanut butter, plus more for serving
- 2 teaspoons pure vanilla extract
- 3 ripe sliced bananas, divided
- cooking spray
Instructions
- Preheat the oven to 375°F.
- Spray an 8-inch square baking dish with cooking spray.
- In a large bowl, mix together the oats, baking powder, cinnamon, and salt.
- Add in the milk, maple syrup, flaxseed, peanut butter, vanilla and 2 sliced bananas. Stir well to combine.
- Carefully pour oatmeal mixture into the prepared baking dish and top with banana slices.
- Bake for 30 to 35 minutes, until the top is nicely golden. Remove from the oven and let cool for a few minutes. Portion and serve. Drizzle additional peanut butter on top and serve with fresh banana slices.
Notes
- For storage: store in the refrigerator in an airtight container for up to 4 days.
- To reheat: to reheat the whole baked oatmeal, cover with foil and reheat in a 350°F oven for about 20 minutes. For individual portions, set toaster oven to 350°F and bake for 5-10 minutes or reheat in the microwave for 1 minute.

Love this recipe, but for a dessert as opposed to breakfast, by halving the serving size. It’s easy, one of those that you’ve got all the ingredients and a great way to use bananas. We love it warmed up with real cream whipped topping and chocolate drizzled on it.
