One of my favorite oatmeal recipes to date is this stove top recipe for peanut butter banana chia oatmeal. Peanut butter and banana are simply the best oatmeal combo in my personal opinion and I’m honestly surprised it took me so long to come up with a baked oatmeal recipe that has both!

Why is Eating Breakfast Important?

Breakfast is often deemed the most important meal of the day? Isn’t it funny that it’s probably the most skipped meal of the day? So why is it so important anyway?

  • Kick start your metabolism – The earlier you eat in the day, the more calories you’ll burn! Seriously.
  • Energy – Food=fuel. Eating breakfast will give you energy to get important tasks done all day long.
  • Concentration – Do you notice that you can’t focus on anything but food when you’re hungry? THAT is why eating breakfast improves concentration throughout the day!

Peanut Butter Banana Baked Oatmeal Recipe

I sound like a broken record but this recipe is so simple to make! Start by mixing the dry ingredients together in a large bowl. Mix in the wet ingredients as well as two sliced bananas. Stir well to combine everything. Pour the mixture into a baking dish that has been sprayed with cooking spray and top with additional banana slices. Bake until golden brown, drizzle with more peanut butter and enjoy! You just made the best gluten-free, dairy-free breakfast around. 😉

Can You Make Baked Oatmeal Ahead of Time?

Yes, you can totally make baked oatmeal ahead of time. There are two options that work really well.

Option 1: Bake and Then Reheat Before Serving

  1. Prepare baked oatmeal as the recipe suggests. Once baked, let the oatmeal cool, cover the baking dish and place in the fridge. You can do this 1-2 days in advance.
  2. When you’re ready to serve, take oatmeal dish from fridge, cover with foil and reheat in a 350°F oven for about 20 minutes. For individual portions, set toaster oven to 350°F and bake for 5-10 minutes or reheat in the microwave for 1 minute.

Option 2: Prep as Much as You Can Without Baking

  1. Mix together your dry ingredients in a bowl, cover and let sit out on the counter until morning.
  2. Mix together all the wet ingredients in another bowl, cover and store in the fridge until morning.
  3. In the morning, simply mix the wet and dry ingredients together, pour oatmeal mixture into your prepared baking dish and bake as recipe suggests.

Love this just like I love most of your recipes. My one year old devours this for breakfast!
(I usually reduce the amount of maple syrup when making it for her but that’s the only change I make)

Husband loves this. I’m not a big PB girl, myself. By request, he asked me to double the PB. Now I’ve been making this for him and the berry erosion of baked oatmeal for myself. The only thing I do differently is add 4 eggs (because we love them) and I think my non-measured cinnamon would be like 1T worth. I’ve made these like 4 weeks in a row. Such easy breakfasts. Thanks!

Just love this recipe, thank you. I make it every other week but mash my bananas as they’re frozen. It seems to work well though!

    1. Amazing! I am so glad to hear that you are loving this recipe, Jane. Thank you for your review & star rating, it means so much to me!

    1. Hi Ashley – Adding protein powder could potentially dry out the oatmeal to much (especially depending the protein powder), so you would need to add more liquid. You could make my Protein Baked Oatmeal and add bananas and peanut butter (the best combo) hope that helps!
