Halloween is almost here and you know what that means… it’s time for a delicious candy bar remake! I’ve shared my version of Reese’s peanut butter cups, Twix bars, Snickers bars with these snickers stuffed dates and now these easy, homemade Almond Joy bars!

This homemade version is the perfect alternative to make for Halloween this year when you’re craving something sweet, but are trying to avoid store-bought candy.

This recipe is seriously so easy to make! All you need are 5 simple ingredients and a little patience while the bars chill in the freezer (that’s the hardest part, IMO!) and you’ll have a delicious bite-size treat that tastes just like the real deal minus the refined sugars or artificial ingredients.

Making Homemade Almond Joy Bars

Almond Joys have always been one of my favorite candy bars, along with Twix, Reese’s peanut butter cups and Snickers… I’m all about chocolate candies if you couldn’t tell! The only problem with all the store-bought candy is that they’re made with lots of not-so-good-for-you ingredients. For instance, Almond Joy bars are loaded with corn syrup (the first ingredient!), white sugar, vegetable oil, soy lecithin, pgpr (what even is this?!) and hydrolyzed milk protein. No thank you!

That’s where this homemade Almond Joy bars recipe comes in. This recipe is made with just 5 simple ingredients that you can actually pronounce like shredded coconut, sweetened condensed coconut milk, almond and chocolate chips. Plus, it’s gluten-free, soy-free, dairy-free and vegan. It made me feel good knowing exactly what ingredients are going into the sweet treats that I’m eating!

Ingredients measured out to make Healthy Almond Joy Bars: dairy-free dark chocolate, sweetened condensed coconut milk, unsweetened desiccated coconut, raw almonds and coconut oil.

Ingredients Needed

  • unsweetened finely shredded/desiccated coconut – make sure you’re using unsweetened fine or desiccated shredded coconut. If you use longer shreds, the bars might not hold together as well. My favorite brand is Bob’s Red Mill shredded coconut.
  • sweetened condensed coconut milk – to keep this recipe vegan we’re using sweetened condensed coconut milk instead of regular condensed milk. This is the key to the coconut filling holding together for the bars! I used Nature’s Charm sweetened condensed coconut milk, but any brand should work. Just make sure you’re using 1 cup! You can also make homemade sweetened condensed coconut milk if you prefer.
  • almonds – you’ll need 20 almonds to press into the center of the coconut mixture. I recommend using raw, unsalted almonds for this recipe!
  • dark chocolate chips – your favorite brand of chocolate chips will work, just make sure you’re grabbing dairy-free to keep this recipe vegan. I used the Enjoy Life dark chocolate chips, which are vegan and allergen-friendly, but I also like Lily’s dark chocolate chips for a low sugar option.
  • coconut oil – this is used to help make the melted chocolate a bit thinner, which makes it easier to dip the Almond Joy bars. You can skip it, but your melted chocolate will likely be pretty thick.

How to Make

Make coconut mixture: Combine coconut and condensed milk in a large bowl.

Make bars: Use a tablespoon to scoop the mixture onto a parchment lined baking sheet, forming into rectangles. Place one almond at the center of each bar.

Chill: Place baking tray in the freezer for the bites to harden for at least 2 hours.

Melt chocolate: Once bars have hardened, place chocolate and coconut oil in a bowl and microwave in 15-second increments, stirring between each time, until the chocolate is fully melted.

Coat bars: Once the chocolate has melted, use a fork to dip each bar into the chocolate until fully coated.

Freeze: Place the bars back onto the parchment paper and into the freezer to let the chocolate harden for at least 1 hour. Once chocolate has set, it’s time to enjoy!

How to Store

I recommend storing these bars in an airtight container in the fridge or freezer. I like these glass storage containers or my Stasher bags for storing. They should last up at least a week in the fridge and up to 3 months in the freezer… but they don’t usually last long around here! I recommend letting them sit for 5 minutes after taking them out of the freezer so they’re aren’t too hard.

Almond Joy Bars

These almond joy bars are made with just 5 simple ingredients and taste just like the real deal. They're vegan, gluten-free, super easy to make and are sure to satisfy your candy craving!
Prep Time: 20 minutes
Chill Time: 2 hours
Total Time: 2 hours 20 minutes
Servings: 22

Ingredients

  • 2 cups unsweetened fine shredded/desiccated coconut
  • 1 cup sweetened condensed coconut milk, or 1 11.25oz can – I used Nature’s Charm
  • 20 raw almonds, or roasted and salted
  • ¾ cup dairy-free dark chocolate chunks or chocolate chips
  • 1 teaspoon coconut oil

Instructions

  • Combine coconut and condensed milk in a large bowl.
Desiccated coconut and sweetened condensed coconut milk mixed together.
  • Using a tablespoon or small cookie scoop, scoop coconut mixture, form into rectangular shape and place on a parchment lined baking sheet. I got about 22 bars.
A cookie scoop lays on a parchment lined baking sheet alongside coconut mixture shaped into rectangular bars.
  • Place 1 almond in the center of each bar. Place baking sheet in the freezer for the bars to harden for at least an hour.
A single almond is placed upon the 20 coconut bars.
  • Once bars have hardened, place chocolate and coconut oil in a microwave safe bowl and melt in the microwave in 15 second increments, stirring between each. It shouldn't take longer than 1-2 minutes total for the chocolate to melt.
    A bowl of melted chocolate.
  • Dip/coat each bar into the melted chocolate, one at a time. Use a spoon to coat until completely covered. Place chocolate covered candy back on the baking sheet lined with parchment. Repeat until all pieces are coated.

  • Place bars back into the freezer to let the chocolate harden. Once chocolate has set they're ready to enjoy! They may be a little hard directly from the freezer so let them sit out about 5 minutes before eating.

Made these today and they are amazing! I also dipped some in melted white chips! I may never eat a store bought Almond Joy again! Thank you for the great recipe!

    1. Yes, I love hearing this, Amanda. I am so happy that you are loving this recipe. Thank you for your review & star rating, I really appreciate it!

  2. These look and sound very good. I’m looking forward to making some! My only question is What is desiccated coconut? Does it mean sugar free or that the coconut is in smaller pieces? I really like the Almond Joys at the store, so it will be nice to have a healthier version.
    Thank you.

    1. Hi Jeannette – It is the way the coconut is shredded. You don’t want them to be long, you want them to be short and fine. Hope you enjoy this recipe!

love this taste of these! I used an almond substitute since I was making these nut free since I’m allergic. my only issue with this recipe is my coconut and milk did not seem to be as thick and solid as shown which after freezing them still make it difficult to coat since I couldn’t stick the fork thru the bar or it would have fallen apart. I froze them overnight and did the chocolate as prescribed in the recipe. would love to make again. any tips going forward? thank you!

    1. Hey Catherine – What brand of sweetened condensed coconut milk did you use? I’ve found that some brands are thinner than others so that might have been the problem. Sorry you had troubles coating the bars, but I’m glad you enjoyed the flavor!
