Description

This egg and avocado bowl combines hard boiled eggs with creamy avocado slices for a super healthy and quick meal that’s loaded with protein, healthy fat and fiber while also low in carbs.


Ingredients

  • 2 hardboiled eggs, chopped
  • 1/2 large avocado, chopped
  • 1 heaping Tablespoon red onion, finely chopped
  • 1 heaping Tablespoon red bell pepper, finely chopped
  • sea salt and ground pepper, to taste

Instructions

  1. Combine eggs, avocado, onion and bell pepper in a bowl.
  2. Sprinkle on sea salt and ground pepper.
