Description
A simple, single-serving dessert made with coconut flour, this banana coconut flour mug cake is grain-free and the perfect treat to satisfy a sweet craving.
Ingredients
- 2 Tablespoons coconut flour
- 1 Tablespoon maple syrup
- 1/2 teaspoon baking powder
- 1/4 teaspoon sea salt
- 1/2 banana, mashed
- 3 Tablespoons egg whites, whisked (or 1 egg)
- 1/2 Tablespoon melted coconut oil
- 1 Tablespoon almond milk
- 1/4 teaspoon vanilla
- 1 Tablespoon chocolate chips
Instructions
- In large mug, mix together coconut flour, maple syrup, baking powder, sea salt, banana, egg, coconut oil, almond milk, mashed banana and vanilla. Stir in chocolate chips.
- Place in microwave and heat on normal setting for 2 minutes. Check to see if it’s still doughy in the center, if so heat for another minute until mug cake is cooked through. Let cool for 2-3 minutes, then enjoy.
