Brown Rice Krispy Treat Yourself

I’ve posted about brown rice krispy treats before but it was 3 years ago and the recipe has progressed so I don’t feel bad re-posting. Plus, it’s Friday and anything goes. Right?

Everyone, both kids and adults, love these! They’re gluten-free and chewy with a hint of sweetness, but not over the top sugary. I like that they satisfy a sweet tooth but are still pretty healthy and that you can feel good about eating more than one.

Brown Rice Krispy Treats


  • Yield: 16

Description

The recipe is delicious on it’s own, but if you’re feeling like you need a little chocolate in your life (as I was today), simply melt dark chocolate and drizzle it over the squares. As you can imagine, it makes them extra tasty.


Ingredients

  • 3 cups crispy brown rice cereal (I used Erewhon)
  • 1/2 cup almond butter, peanut butter or other nut butter
  • 2/3 cup brown rice syrup (I used Rice Dream)
  • 1/4 cup raisins
  • dark chocolate bar (optional)

Instructions

  1. Place cereal and raisins in a mixing bowl.
  2. Heat nut butter and rice syrup on low heat, stirring until warm and creamy, but not boiling.
  3. Pour the nut butter and rice syrup mixture over cereal and raisins and coat evenly.
  4. Press mixture evenly into an 8 X 8 casserole dish or baking sheet lined with parchment paper.
  5. Let cool for 1 hour before cutting into squares.
  6. Serve as is or drizzle melted dark chocolate over the squares before serving.

I’ll also note that melting the dark chocolate in the microwave was super easy. All you have to do is cut a bar of chocolate into small, similar sized pieces, place them in a microwavable bowl and heat on 50% power for 30 second increments. Stir every 30 seconds until the chocolate has melted. My batch took only 1 minute!

Oh and Happy Earth Day!! Starbucks is celebrating by offering anyone who brings in a reusable mug or tumbler today a free brewed coffee or tea. The tea can be hot or iced. And, for people who don’t have a travel mug or leave theirs at home and don’t want to buy a new one, they can ask for a “for here” cup and Starbucks will pick up the tab.

Free coffee/tea – yes please!

  4. OOOoh, these look great! They’re like a fancier (and healthier!) version of the packages Rice Krispy treats. Filled with peanut butter and topped with chocolate…I might eat the entire batch! 😉
