Grapefruit Avocado Arugula Salad


This grapefruit avocado salad is the perfect winter salad with a blend of spicy arugula, creamy avocado, blue cheese and fruit. Serve as a side or add protein to make it a main dish. 


  • 34 cups fresh arugula or other baby greens
  • 1 grapefruit, segmented
  • 1/2 avocado, sliced
  • 23 T walnuts, chopped
  • 23 T fresh blue cheese, crumbled
  • 23 T dried cranberries
  • 1/4 cup basic balsamic dressing


  1. Divide arugula between two salad bowls. Top each with the remaining ingredients. Serve with balsamic dressing.
