As of Late – Healthy Eats and Workouts

Happy Friday!

Just thought I’d pop in with a quick update of what has been going on lately. I feel like I have so much to share but little time to sit down and post, but here’s a little preview of what’s new and good…

Healthy Eats

I made a big pan of butternut squash lasagna for dinner on Sunday night and Isaac and I have been eating it over the past few days. Well, to be perfectly honest, it was gone by Wednesday.

I used two recipes for inspiration – the one Gina recommends from Cooking Light and Kath’s Veggie Lasagna. I combined ideas from both and ended up using a no sugar added jarred marinara sauce, oven ready noodles, onions, spinach, butternut squash, fresh mozzarella and cottage cheese instead of ricotta.

You can’t tell from the picture, but it turned out a little on the runny side. I guess the liquid from the veggies did it, but the wateriness didn’t bother us because the taste more than made up for it! I’d definitely make it again – especially since Isaac couldn’t stop talking about how good it was all week.


I haven’t really discussed it, but since finishing up the Body for Life training challenge I’ve been consistently working out but with a less structured plan. Here’s what I’ve been combining into my weekly routine:

  • 30 minute walks/runs in the morning before work – The weather has been really nice here in VA and cardio in the morning is a great way to get the day started on the right foot.
  • Strength training at home
  • A weekly yoga class – I found a class I really enjoy through Project Yoga Richmond and I’ve been attending it once a week. It feels good to have a regular yoga class to attend.
  • Exercise TV: Banish Fat Boost Metabolism by Jillian Michaels
  • Stair Master HIIT – One of my favorite ways to get in a quick but intense and sweaty workout.
  • The Fitnessista’s October Workout – I used the Tabata Timer iPhone app to keep track of the intervals and the time went by so quickly. Switching back and forth from cardio to strength training moves helped fight off boredom as well.
  • Tone It Up workout videos – lately I’ve been loving the SHREDmill and RUSH workouts

Overall, I’ve really enjoyed switching things up and doing different workouts throughout the week. My body seems to be liking the change as well. πŸ™‚ Oh and we also bought something new for the house – an Iron Gym pull up bar.

Isaac has been wanting one for a while and we finally got it from Target last weekend. One of my fitness goals for the past few years has been to do a pull-up and I’m really hoping that this gadget will help me reach that goal. Right now I can do 1 pull-up on the assisted pull-up machine at the gym with 18 lbs of assistance. I’m getting there, but I still have some work to do!

The only door frame that the Iron Gym works on is the one for our guest bathroom,Β which is downstairs right by the kitchen and backdoor. It’s kind of in the way because guests can’t shut the bathroom door when it’s up, but I think it’s good because it seems Isaac and I will remember to use it more often than if it were hidden upstairs somewhere. We’ll just have to remember to take it down before we have people over. πŸ˜‰

I’ll keep you all posted on my pull-up challenge… in the meantime, have a wonderful Friday and weekend.

  1. I’ve been doing the original Insanity program since October 1st in an endeavor to stave off the magnitude of calories around from Halloween to New Year’s. I’m two weeks in and am definitely stronger and fitter as I’m able to go longer before collapsing on the floor for a rest! I’m a bit older than the participants in the program, but using a heart rate monitor and going at my own “insane” level is keeping me fit. Some of the phrases the coach uses is are: “keep your form” and “don’t sacrifice your form for speed”. I’ve never been able to stick to a program for very long and am tired of my traditional 3 days of cardio, 2 days of upper body weights and 1 day of lower body weights. Anyway, it’s been fun so far!

    I wish I had a door for a pull up bar. I ended up getting a standing tower from and do modified pull ups. It’s still a good challenge for me.

    I always enjoy hearing what you’re up to and what treats you’re making.

    Your workouts sound great, I love mixing it up too πŸ™‚
    Tone It Up workouts are great for short little additions to workouts, they’re so fun!

  3. I love reading your posts about TIU…I LOVE their program and what T&K stand for! Glad you are enjoying your ‘mixing it up’ phase and that you are seeing results. You’re brave for the chin up bar, those things intimdate the crap out of me πŸ™‚

  5. hey! Just found your blog!! I have always wondered if I start eating healthy and exercising/practicing yoga three times a week, would I start loosing weight? If so, I have already lost 8 pounds, however, I believe I have hit a plateau! What should I do?! I recently found your blog!! So glad to have found it since your experiences, such as losing weight since the start of healthy eating and exercising, it gave me hope that it is truly possible to be skinny πŸ™‚ Couple questions!! Do you exercising everyday… Like EVERYDAY?! I truly admire your dedication and determination:D

      To answer your question, I do try to get in some sort of movement everyday since my job involves sitting at a desk all day. I do take rest days when my body needs them and I don’t always do intense workouts, but I do try to workout at least 6 days a week. πŸ™‚

  6. Ive been wanting to try and work on being able to do a pull up as well! No luck thus far. I’ll have to find someone with one of these bars

  7. I can’t do a pull-up either! It’s so frustrating, especially when I try and then walk away defeated and a guy walks up to the bar and bangs out 25 like it’s nothing. I am training for a marathon (yikes!) so my workouts have been nothing but running, but I do your walking incline HIIT ALLLLL the time on my cross training days. I love that workout! I will have to try the stairmaster HIIT as well.

  8. The lasagna looks yummmo! I have been craving a pasta-ish dish so I will have to try. I am also on the ToneItUp plan and those workouts are awesome. Have you tried their Cardio Dvd, “One day fat blast”? Its amazing and time efficient cardio.

  9. Oh gosh, my Hubz would love that pull up bar. Whenever we go to the gym that’s the first thing he hits. Must be a dude thing.

    I’m still running over here. Half-Marathon training in full force. And doing some yoga. That’s about it!

  10. That lasagna looks amazing! I absolutely love that recipe.

    I’ve been really into RPM these days and now I’m teaching 3x a week so I’ve taken a back seat on the running which has been nice. I’ve also been into some 3D core work. It’s kicking my butt but my abs are loving it. πŸ˜‰
