Slow Cooker Chicken  Wild Rice Soup

This slow cooker chicken wild rice soup is creamy and comforting, but still nourishing with lots of veggies, shredded chicken and wild rice. Added bonus: it’s so easy to whip up, gluten-free + dairy-free.

Ingredients

wild rice chicken breast olive oil, butter or ghee garlic yellow onion celery carrots dried thyme dried rosemary sea salt + pepper bay leaves low sodium chicken broth gluten-free all purpose flour unsweetened oat or almond milk fresh thyme for garnish (optional)

Add rice, chicken and veggies to a slow cooker.

1. Add to Slow Cooker

Add spices, herbs, broth and water.

2. Add Spices + Broth

Cook on high for 3 hours. Shred chicken.

3. Cook

Melt butter or oil. Whisk in flour and milk.

4. Thicken Soup

Add to soup and stir. The soup will be creamier.

5. Add to Soup

Serve soup with fresh herbs (optional). Enjoy!
