I don’t know about you, but I feel as though this week has been went by so quickly. Why can’t every work week be 4 days short?
So it just so happens that I’ve been eating a lot of Asian food recently (Ginger Thai, Mom’s Siam, and homemade spring rolls). This isn’t a bad thing, because I do love spicy, delicious Asian cuisine. I decided to follow the trend that seems to happening and made Thai Green Papaya Salad for dinner tonight.

Thai Green Papaya Salad
- 1 green papaya, shredded
- 1/2 cup peanuts (I used habanero spiced peanuts**)
- 1-2 cups bean sprouts
- 1 carrot
- Lots of tomatoes, regular tomatoes cut into long thin strips, grape tomatoes cut in half
- 1/2 cup fresh basil, roughly chopped if leaves are large
Dressing:
- 1/2 tsp. tamari sauce
- 2 Tbsp. olive oil
- 1 Tbsp. fish sauce (if vegetarian, use vegetarian fish sauce – available at Vietnamese food stores)
- 1 Tbsp. lime juice
- 1 Tbsp. lemon juice
- 1 tsp. agave nectar
- Prepare the dressing by mixing all dressing ingredients together in a bowl and set it aside.
- My papaya came shredded, but if yours is whole- peel it, then slice it in half and remove all the seeds. Using the largest grater you have, grate the papaya (or use a spiralizer if you are lucky enough to have one!). Place in a large bowl.
- Slice the carrot thinly or use a potato peeler to create peels. Then add the carrot, sliced tomatoes, bean sprouts, and most of the basil in with the papaya. Add the dressing, tossing to combine.
- Add the peanuts (you can either leave them whole, or roughly chop them).
** This dish is usually made spicy, so if you don’t have spice peanuts and like spicy foods you should add a red chili pepper.
I paired the salad with some more homemade spring rolls. (I don’t think I’ll ever get tired of those rolls.) Isaac and I both really enjoyed dinner. I was proud of my salad because it tasted a lot like the dishes I’ve had at Thai restaurants. It was really crunchy, salty and sweet, with a slight kick from the peanuts. Both the salad and spring rolls were a light and refreshing meal, perfect for a warm evening.
Thanks to everyone who was concerned and sent positive vibes my way about my knee injury because it really helped AND I have some great news on the knee front. I went back to the doctor to get my MRI results AND drum roll please… I didn’t actually tear a meniscus! The MRI showed that I have bruised a bone near my knee and the swelling is caused from blood. The bruise can be healed by icing my knee 4 times daily for a week and then icing after exercising for a month. I also have to wear a knee wrap while working out. But no physical therapy and no surgery!
The above explains why I’m writing this post with freezer brunt sausage ace bandaged to my knee.
