I don’t know about you, but I feel as though this week has been went by so quickly. Why can’t every work week be 4 days short?

So it just so happens that I’ve been eating a lot of Asian food recently (Ginger Thai, Mom’s Siam, and homemade spring rolls). This isn’t a bad thing, because I do love spicy, delicious Asian cuisine. I decided to follow the trend that seems to happening and made Thai Green Papaya Salad for dinner tonight.

Thai Green Papaya Salad

  • 1 green papaya, shredded
  • 1/2 cup  peanuts (I used habanero spiced peanuts**)
  • 1-2 cups bean sprouts
  • 1 carrot
  • Lots of tomatoes,  regular tomatoes cut into long thin strips, grape tomatoes cut in half
  • 1/2 cup fresh basil, roughly chopped if leaves are large

Dressing:

  • 1/2 tsp. tamari sauce
  • 2 Tbsp. olive oil
  • 1 Tbsp. fish sauce (if vegetarian, use vegetarian fish sauce – available at Vietnamese food stores)
  • 1 Tbsp. lime juice
  • 1 Tbsp. lemon juice
  • 1 tsp. agave nectar
  1. Prepare the dressing by mixing all dressing ingredients together in a bowl and set it aside.
  2. My papaya came shredded, but if yours is whole- peel it, then slice it in half and remove all the seeds. Using the largest grater you have, grate the papaya (or use a spiralizer if you are lucky enough to have one!). Place  in a large bowl.
  3. Slice the carrot thinly or use a potato peeler to create peels. Then add the carrot, sliced tomatoes, bean sprouts, and most of the basil in with the papaya. Add the dressing, tossing to combine.
  4. Add the peanuts (you can either leave them whole, or roughly chop them).

** This dish is usually made spicy, so if you don’t have spice peanuts and like spicy foods you should add a red chili pepper.

I paired the salad with some more homemade spring rolls. (I don’t think I’ll ever get tired of those rolls.) Isaac and I both really enjoyed dinner. I was proud of my salad because it tasted a lot like the dishes I’ve had at Thai restaurants. It was really crunchy, salty and sweet, with a slight kick from the peanuts. Both the salad and spring rolls were a light and refreshing meal, perfect for a warm evening.

Thanks to everyone who was concerned and sent positive vibes my way about my knee injury because it really helped AND I have some great news on the knee front. I went back to the doctor to get my MRI results AND drum roll please… I didn’t actually tear a meniscus! The MRI showed that I have bruised a bone near my knee and the swelling is caused from blood. The bruise can be healed by icing my knee 4 times daily for a week and then icing after exercising for a month. I also have to wear a knee wrap while working out. But no physical therapy and no surgery!

The above explains why I’m writing this post with freezer brunt sausage ace bandaged to my knee. :)

Veggie Love

The beach wedding turned out to be a success: warm weather, blue skies, the sound of the ocean, and toes in the sand. It was my first time at a Jewish wedding and I had a blast – I’m pretty certain the Hora (chair dance) was my favorite part. After the ceremony there were appetizers. I made myself a fruit and veggie plate.

Soon after, we were served dinner. I had a dressing free salad…

Beans, mashed potatoes, brown rice, and a piece of fish (not sure the type). I ate all the beans and the potatoes, but didn’t end up eating the fish or all of the rice. I did go back to the buffet and grab a small piece of vegetarian lasagna since I didn’t eat the fish.

As a side note, a friend of Isaac’s high-fived me after taking pictures of my food!! He said when he goes to nice restaurants he takes pictures as well and his wife simply doesn’t get it. I laughed and told him about the blog. Hi Ian if you are reading.

There was NO WAY I could pass up dancing so despite the fact that my knee was still swollen I danced the night away. It wasn’t hurting and I iced it when we got back to the room so hopefully I  didn’t do too much damage. We stayed in the hotel Saturday night, woke up this morning for breakfast and then headed back home. It was quite the drive because we had to take he long way home (back roads) due to traffic. We didn’t get home until 2 and I was starving. I decided to make a veggie plate with the last of my edamame hummus. I also had a side of cottage cheese with two (unpictured) chopped prunes mixed in.

I’m glad I didn’t eat anything too big for my late lunch because around 5:30PM we had dinner. It was such a nice evening, Isaac’s family came over and we decided to walk to a nearby restaurant, Mom’s Siam. Luckily we scored a table outside. I ate “my usual” when it comes to Thai cuisine. Fresh spring rolls and Som Tom- green papaya salad. I wanted to compare Mom’s Siam’s rolls and salad to those at Ginger Thai Taste (a Thai restaurant that I go to often that’s only about 6 blocks away from Mom’s Siam).

Both dishes were excellent. The fresh spring rolls with plus sauce were perfect for the warm weather- I’m used to dipping spring rolls in a peanut sauce so tonight I really enjoyed the sweet plum sauce. The papaya salad was a balanced mixture of both hot and cold. The spices made for a lot of heat in each bite, yet the papaya, tomatoes, and lettuce were fresh and cool.

I used to think that Ginger Thai was my favorite Carytown Thai restaurant and now after having my “Thai staples” at Mom’s Siam I’m having a change of heart. The prices for both dishes are around $1-2 dollars cheaper at Mom’s and the portions are v. similar. I have noticed that Ginger Thai’s papaya salad has interesting smell, which makes a wonder if they use fish sauce in the dressing/sauce and occasionally when I’ve ordered the spring rolls the rice paper has been oily on the outside. I know you don’t need any oil to make rice paper stick so this is a bit confusing.I am sure I will be going back to both places but at this point I’ll just say that Mom’s Siam is moving above Ginger Thai in my ranks of Thai Restaurants. :)

I’m still icing my knee and popping arnica like it’s my job. I’ve got my  fingers crossed that it’s just something minor and will get better asap! Hope everyone is enjoying their weekend.
