On the Menu, Yesterday

by Eating Bird Food on September 1, 2011

Sometimes it’s fun to see what others eat daily so I thought I’d kick it old school EBF style and share a full day of typical eats…

I took photos of everything, but forgot the apple, almond and peanuts I ate for a mid-afternoon snack, the La Croix I drank at some point during the afternoon and the mug of coconut chai tea I had after dinner.

Here’s the line up:

iced coffee with frothed milk.JPG

Upon waking, I had a cold brewed iced coffee with frothed almond milk. I had kind of forgotten about my mini frother so it was fun to pull it out yesterday and make fancy coffee.

For breakfast I had a protein pancake. This time I used 1/2 banana instead of the figs and topped it with blueberries and almond butter.

I’m loving the roasted almond butter with flax seeds from Trader Joe’s. It’s so crunchy!

Lunch was a “throw everything that’s in the fridge on greens and make a salad” kind of day. I had a big bowl of spinach with lots of left over grilled veggies (squash, onion and eggplant), corn from the cob, orange bell pepper, broccoli slaw with peanut sauce and garbanzo beans.

I love these types of salads – they’re so flavorful, you don’t even need any dressing!

To soothe my craving for something sweet after lunch I busted out the Power Snacks I was sent to review from Navitas Naturals.

I had three of Cacao Gogi bites and liked them. They weren’t too sweet, but definitely took away my sweet tooth. I haven’t tried the Citrus Chia flavor yet, but once I do I will certainly post a full review.

And last but not least, for dinner I had Isaac grill some bbq tempeh when he was grilling burgers for he and his dad.

While he was grilling I prepped some veggies.

Butternut squash fries are back! <– This is so exciting to me as I love butternut squash and it’s a true sign that fall is drawing near. Bring on the pumpkin and squash!

All together I had the tempeh, quinoa, b-nut squash fries and collard greens.

Everything was delish, but the fries were the highlight of the meal for me. The squash was actually from Isaac’s parents garden and it was amazingly sweet! Since I had something sweet with dinner, I ended up being able to resist my normal after dinner snack. This was a big achievement for me because I’m the queen of after dinner snacking. A current goal of mine is to kick the habit of eating snacks because I’m bored or just wanting something sweet. So far so good!

So there you have it friends, what I ate yesterday! Now it’s time to focus on today because it just so happens to be Friday and I have a three day weekend to look forward to!

Do you have any plans for the holiday weekend? We have a wedding to attend and I’m hoping to host or go to a cook-out. Gotta enjoy the warm weather while it’s still around. It will be fall before we know it!

Hold Up & New Favorite Tempeh Recipe

by Eating Bird Food on March 7, 2011

Eating Bird Food turned 3 yesterday!!

It’s so hard to believe I’ve been blogging for 3 years now! Things have progressed over the past few years – my photos, writing and readership have all gotten significantly better and I’ve fell head over heels in love with blogging and all that comes with it. As a small token of my appreciation (for my lovely readers) I thought today would be the perfect day to present an awesome giveaway. But…. as it turns out there has been a hold up in the giveaway department so that will be coming later this week. Keep your eyes peeled.

To make up for it, I have some weekend highlights and a fantastic recipe to share with you.

First up, Lauren and Trevor’s engagement party was a blast…

I can hardly wait for the rest of the festivities to ensue – the bachelorette party, shower and actual wedding are all coming up soon. :)

I also found out that my local Whole Foods expanded their bulk bin section and now has a Trail Mix Bar where you can mix and match bulk bin items and make your own trail mix. I’ve been searching for a make your own trail mix bar since I heard there was one at a Whole Foods in Chicago and now there’s one at my WF! You honestly don’t know how excited I was to see this. It’s a little crazy!

And guess what? I saved the best for last – my new favorite tempeh recipe!

Now I’ve had plenty of delicious tempeh dishes out at restaurants, but to be honest, I had kind of given up on making tempeh at home (besides the Fakin’ Bacon variety). Don’t think I haven’t tried – I’ve done the boiling method, where you boil/steam the tempeh for 10 minutes before marinating and cooking it to take away any bitter flavor. I’ve tried almost every flavor variety on the market and I’ve marinated for hours. All of these methods worked okay but the finished product still wasn’t “restaurant good”. Well last night things changed, all thanks to a recommendation from Mama Pea to try one of her favorite recipes for Orange Pan-Glazed Tempeh from 101 Cookbooks.

I’m so glad I gave this recipe a shot – it was really quick and easy. No steaming, boiling or marinating – just a little juicing of some oranges, a bit of chopping and some sautéing and dinner was ready in less than 30. And, it was DELICIOUS- the sauce thickened up while cooking and had a nice sweet flavor that complemented the tempeh’s natural nuttiness. AND, there was no bitter aftertaste! (I will note that LightLife’s Three Grain variety is the mildest tempeh I have found and it’s the one I used for this recipe.)

I paired the tempeh with brown rice (pressure cooked in 20 minutes!), collard greens and a squeeze of lime. Each bite was savored and I literally day-dreamed about having the leftovers tonight for dinner. <– If that doesn’t convince you that this is a good recipe, I’m not sure what will. :)

I’m so excited to have found this recipe. Thanks to Heidi I can now make amazing tempeh at home any night of the week! If you haven’t heard of tempeh before or if you’re wondering what’s so great about it, check out this post and find out why it’s quite the super food.

Alright, I’m off to watch the end of the CAA tournament (even though I’m bitter Mason isn’t in it). Check back soon for the blogiversary giveaway!

Sweet!

April 24, 2010

Happy Saturday friends! Although the weather is dreary here I woke up super excited because today was the first pick-up for the CSA that I joined this year. Upon waking, I hit up the gym for a 45 minute treadmill workout. Since I’m meeting with my personal trainer tomorrow and we focus mainly on strength [...]

I want new dishes

January 27, 2009

I’m not sure why I’m just now realizing it, but I think I need some new dishes. We are still using the ones Isaac’s mom let him bring to college. I guess we just never really thought about it, but after taking tons of food photos, I’m thinking I really need some more photogenic plates. [...]

Tempeh and Eggplant

October 7, 2008

Tonight for dinner, I tried this recipe from Kath Eats. I had some of the Three grain tempeh and eggplant so I thought why not? The only thing I really changed was omitting the tomatoes because I didn’t have them, but I added some left over butternut squash.    It was tasty – but Kath’s [...]
