Eating more than Cookies

Having cookies take over your blog for 12 days kind of wrecks havoc on one’s blogging schedule. I somehow just realized that I had numerous photos I’d taken but never shared – some were definitely worth sharing so I figured today I would do just that.

Although I will admit, I’ve been eating my fair share of healthy no bake cookies, I’ve also been eating some tasty meals. Here’s a little recap:

Lots of Kale-N-Rice bowls… thanks to Kristen’s new cookbook (EASY Raw Vegan Transition Recipes) for this grand idea.

This combo of marinated kale with cooked rice, dried apricots, avocado and sunflower seeds was delicious and super easy. I’ve already had it many times since I first tried it. Kristen is a genius. That is all. :)

Swiss chard wraps stuffed with veggies and plain tofu and dipped into a spicy Thai sauce. YUM!

I love how colorful swiss chard is.

And of course, many bowls of hot oats have been devoured. A girls gotta keep warm somehow with all this cold weather!! My fave bowl as of late has been banana/cinnamon oats topped with sweetened cacao nibs and pumpkin spiced almond butter.

I actually made Ashley’s recipe for pumpkin spiced almond butter in my Vitamix and it turned out really dense and not super smooth. I didn’t mind because the taste was amazing. But once I read Kath’s post about her almond butter turning out drippy, I put my mixture in my mini food processor/chopper for a few minutes and viola- mine turned out smooth and drippy too. I guess the Vitamix isn’t the best tool for nut butters. :/

And for dinner, when I’m not eating soup (Isaac has made 3 delicious veggie soups this week!!!), I’ve been making stir-fry with frozen veggies and tofu or shrimp. It’s fast, healthy and tasty – winning combo in my book.

In other news, I think we’re just about ready for Christmas!!!

Tomorrow is my last day of work until 2011. I’m off for the next two weeks, which is absolutely amazing- have I mentioned how much I love the company I work for?

Isaac and I we’ll be traveling south to the beach this weekend and then coming back to Richmond mid-week for Christmas. I’m sure I’ll have lots of good eats and fun stuff to share with you all.

Busy Up in Here

As most of you know I’ve been extremely busy, but with that said, I’ve still had to time to create some delicious eats.

For instance, the breakfast below is what I like to call The Lean Banana Split – all the flavors of a banana spilt but with less calories, more protein and fiber, and it’s for BREAKFAST!

  • 1 serving of Kashi Go Lean
  • 1/2 scoop of chocolate protein powder
  • 1/2 banana, sliced
  • 2-3 strawberries, sliced
  • Approx. 3/4 cup of Unsweetened Vanilla Almond Milk

I’m skipping over lunch (because I usually just have a salad) and heading straight to meal that is usually the most time consuming.

Quick, healthy, and tasty dinners are hard to come by without falling in a food rut and eating the same ol’ things week after week. Well this week I came up with two standbys. One is an oldie- frozen/fresh combination stir-fry and the other is a new recipe that I decided to try and will continue to make because it was absolutely spectacular!

First up, frozen stir-fry veggies (from Costco), stir-fried in water. I added a touch of freshness by tossing in a portobello mushroom and some bean sprouts. Once the veggies were cooked to my liking I added some Bragg’s Liquid Aminos and some sriracha hot sauce… quick and easy!

And for the spectacularness… I give you my rendition of Fitness Magazine’s Greek Quinoa.

I will definitely be making this again, especially when Isaac is back in town because I’m sure he’ll love it. It was fast, very easy, plus it tasted heavenly. I am so glad I made the whole recipe (4 servings) rather than halving it because now I have left-overs!

I pretty much followed the recipe but I did change a few things. The changes are italicized.

My Ingredients

1/2 cup uncooked quinoa
1 cup juice from home grown canned tomatoes, plus additional water
2 Roma (plum) tomatoes, seeded and finely chopped
1/2 cup shredded fresh spinach
1/3 cup finely chopped red onion
4 shredded basil leaves
1 tablespoon of red wine vinegar

2 tablespoons olive oil
1/2 teaspoon salt
Spinach leaves
2 avocados, pitted, peeled, and sliced
1/3 cup crumbled feta cheese

Off to bed, I need my beauty rest as the rest of the week is gonna be B-U-S-Y!!
