I celebrated by making a big loaf of Irish Soda Bread last night!

Would you believe that I’ve never baked a loaf of “real” bread – excluding quick breads (like Banana)? A friend of mine kept telling me how easy it was so I whipped out one of my cookbooks and started poking around. I came across this recipe in one of my favorite cookbooks, The Grit Cookbook.

What could be more perfect than Irish Soda Bread for St. Patrick’s Day?
It turned out great. It’s a bit sweet from the raisins but the caraway seeds make it taste almost like a rye bread. I love the combination of flavors! I shared a few warm slices with Isaac and his friend last night, saved a bit for breakfast this morning and sent the rest with Isaac for his students to enjoy!
Breakfast turned out to be quite lovely. Too bad my eggs aren’t colored green- that would have been really festive.

I spread a little sunflower butter on the Irish Soda Bread after the photo and it was amazing! This combo of fruit, grains, fat and protein kept me feeling full all morning long.

At this point I don’t think I’m going out tonight so please drink a green beer for me!!
