Huge

by eatingbirdfood on August 31, 2009

Today’s weather was the first sign that summer is almost over. I’m a little sad, but also excited because I love all things fall – particularly the cuisine and foliage here in VA- it’s beautiful! My car thermometer was at 68 degrees at 5:45AM and I don’t think it got much warmer over the course of the day- maybe 75 at the most. The reason I was up and in my car while it was still dark out is because I went to a 6:00AM boot camp class. The class s offered at my gym and is taught by the same woman who coaches the Ladies boot camp meetup.com group I’ve been attending. It was intense, but I loved it. I think she mentioned at the end of class that we did over 150 pushups! Too bad I had done arms yesterday as well. Needless to say I’m sore!

Since the end of summer is drawing near I thought I would post a few photos of my favorite summer eats- salad. In reality the above statement was just a ploy to post a bunch of salad pictures that were taking up storage space on my camera. :)

Salad number 1: baby spinach topped with locally grown yellow tomatoes, red purple onion and cabbage, cucumber, and avocado.

Salad number 2: baby spinach with red tomatoes, a sunshine burger, roasted eggplant and raw corn & avocado salad.

Salad number three was massaged kale with carrots, tomatoes, TJ’s goddess dressing, and a slice of TJ’s naan.

Salad number four was massaged kale with tomatoes, sun dried tomato, and red purple cabbage.

Salad number five was actually my lunch today and the reason for the title. Look how big that slice of tomato is. It’s about the size of my palm! And it was homegrown without steroids! Under the monstrosity that is a tomato there are black beans, red purple onion, hickory smoked tofurkey, and organic spring mix.

Last but not certainly not least, the sixth salad was my dinner tonight. And I definitely saved the best for last as this was so tasty. I used the organic spring mix, onion and cabbage, cherry tomatoes, and topped it all with fish sticks oven “fried” tofu.

I added a little TJ’s goddess dressing and mixed it all up. Soooo good!

So there you have it- what I’ve been eating for lunch and dinner almost everyday this summer- SALAD!

As you can tell I use a lot of the same salad staple- tomatoes, onion… and the cabbage- it’s seriously been in the fridge for over 2 weeks and is still good. But I also try to switch it up so that having a salad isn’t boring. To be honest salad is one of my favorite foods- it’s just so versatile!!

Do you love salad or think it’s blah? What’s your favorite summer food?

Lots of B-days in FEB

by eatingbirdfood on February 8, 2009

For some odd reason I feel there are a ton of b-days in February, including both Isaac’s and mine.  This weekend  was totally dedicated to Isaac and his b-day!

I’m tried and should really already be in bed, so I’m going to try to make this recap really quick with little to no description of my meals, however, if you have any questions feel free to ask.

Here is my lunch from Saturday:

Spinach salad and roasted potatoes that Isaac made.

Isaac’s friends and I set up a surprise b-day party for him. We got a private room at his favorite bar. He was totally surprised and it turned out great and we didn’t even have to coax him into going there… since it’s his fav place he’s the one that recommended it.. PERFECTION. We had such a good time:

I promise Isaac doens’t always run around wearing mardi gras necklaces. (Someone got it for him and it had a kings hat on it- pretty silly)

We stayed out pretty late so I woke up LATE this morning and was starving! Breakfast was banana oatmeal with pumpkin stirred in with cinnamon raisin PB- I’ve had this same breakfast for 3 days in a row and it still tasted magnificent.

I didn’t drink much at the party because I was totally looking forward to 65 degree weather today and taking a nice long run outside (hangovers arent’t so great for waking up and running). My cousin and I did just that after breakfast. It was so nice. I haven’t been running outside in who knows how long because it’s been too stinkin cold. This week is suppose to be nice and I can’t wait… lots of running to be had.

After our hour long run I came home hungry to eat lunch. I had another spinach salad and more roasted potoatoes.

Check out the purple califlower!

Since today was Isaac’s actual b-day a friend invited us over for a bbq dinner. I brought along a veggie burger and had that on 1/2 a bun. They didn’t have any other veggie options -only chips. I never eat chips, espeically not regular, plain UTZ chips, but I was hungry and caved it. Dang it! I wish I would have brought a side with me :/ oh well….

Isaac had a fab b-day and loved his gift- I got him sunglasses, so this weekend was a success! Hope everyone else had a great one! I’m excited for this week coming up. My b-day countdown is on!! YIPPE!

Speaking of birthdays: Happy b-day to Meghann!

Size Does Matter

August 29, 2008

I like to use small utensils because I feel the big spoons and forks are too large for my mouth. Same goes for dishes – normally I don’t use our large plates and bowls when I make myself a meal, that way I keep my portions in control and feel as though there isn’t empty [...]

A Delicious Concoction

August 5, 2008

I won a YAS tank from MizFit and I’m so pumped! New workout clothes make me really excited and motivated to hit the gym so this is a really good prize: Also, just because I’ve never worn anything with skulls on it before, I’m interested to see if people look at the ground when they [...]

Snacking the afternoon away

June 19, 2008

I didn’t really want left overs for lunch today, but I really didn’t have much to choose from. So I packed the leftover curried sweet potatoes, spinach, and chickpeas along with some veggies and hummus. After eating this I was still a bit hungry so I had some pretzels that I had packed as well. [...]

Lights out!

June 17, 2008

I went to the gym tonight and had planned to do a spinning class at 6:30, but I got there at 6:00 and started on the treadmill, which is probably better because my thighs are sore from yesterday’s class. Our area was having a thunderstorm watch so the lights kept flickering, which started to make me nervous [...]
