Whirlwind of a night

Not really. I just feel like I have been really busy since I got off work. I left at 5:30, went to the gym, walked on the treadmill for 30 minutes, went to a class at the gym from 6:30-7:30. Came home and made this for dinner: veggie burger one 1/2 a bun, chili sweet potatoes, and peas. And a salad.

I then went ahead and started preparing homemade gazpacho for tomorrows lunch, and some other lunches this week I suppose since it made 5 servings. I used a recipe of the South Beach diet book I have. I hate to admit it, but my college roommate and I did the phase 1 of this diet last year just to try it. It’s really restrictive.. basically no carbs for two weeks (PHASE 1), then you can start gradually adding them back in. We did well for week 1, then the weekend came around, which just happened to be Easter weekend, and we both we to see our families and of course didn’t stick to the diet and never started back again when we came back to school. I did lose 5 pounds and gained those back within 2 weeks, however I also didn’t have my period that month, so yeah I don’t recommend the no carb thing. There is a plus side, however, because I still have a few good recipes in the book, the gazapacho and a portobella mushroom thing. I’ll probably end up making that at some point. So after the soup and talking on the phone with my cousin for an hour, I took a shower, then finally sat down to rest at 10:30 and now its 10:55, so I should probably go to bed soon… whew the evenings go by too quickly.
